Historical context

Maple syrup is an emblematic product of Quebec’s terroir and culinary heritage. It has its roots in the habits and customs of the Aboriginals, who collected maple water in birch bark before the arrival of the first European settlers, notably to flavor certain dishes. They passed on this springtime tradition to the French, who began boiling the harvested water in metal pots to obtain syrup and sugar.
